I hope you, seen the film of the same name , not because it’s very funny , but it is about a
passion for great food that is full of flavor it’s show that it’s name sake dish can be satisfying
all tastes from discerning gourmet to the lover of good home cooking.the word “ ratatouille “
Comes from ”touiller “ which means “ to stir round or mix “
The recipe originated in Nice .
Preparation time 20 minutes plus cooking time the pasta and rice about 2 hours
1/2 cup olive oil
1 eggplant peeled and cut into large cubes
1 white onion diced
4 garlic cloves minced v
1 red pepper seeded and sliced
1 green pepper seeded and sliced
1large Zucchini cubed large
3 cups peeled and seeded tomatoes cut in large chunks
Pinch of sugar
1 Bouquet garni made of ( parsley, thyme,f resh basil); tied together with kitchen strings
Sea salt, black pepper
Rice or pasta to serve
In a large Dutch oven or cast iron saucepan ,heat olive oil over medium heat add eggplant and
cook few minutes until soft add onion garlic and peppers and cook 3 to 4 minutes stirring
occasionally then add zucchini, tomatoes and sugar, add the bouquet Garni and simmer over
low heat 1 hours or more until you get the texture what you want.
When ready check seasoning sprinkle with fresh basil and serve with rice or pasta.
